Are you a creative barman?
One day, one of our top VIP clients who used to drink Champagne all the time, got tired of it and asked me to make her a green-coloured cocktail. The only green drink we keep is crème de menthe. I made her a drink with it, but she said she hated that liqueur. So I came up with an alternative called 'Tico Tico’ that is light green and very tasty. She loved it, and to this day still enjoys the ‘Tico Tico.’

Do you see lots of celebrities?
Yes, but they are not always obvious. They come here because it is discreet. We used to have a customer who brought the same guest every time. We became good friends. He told me: "This guy is going to become the No.1 comedian in England." Several years later it turned out to be David Jason from 'Only Fool and Horses.'

Your motto?
I never forget a face, and I usually remember what drinks my guests had last time they were at Bertie's.
